Caramelized Onion Tart With Olives

- 1 tablespoon unsalted butter
- 2 tablespoons extra virgin olive oil
- 2 medium onions, thinly sliced
- 2 tablespoons fresh thyme leaves
- all-purpose flour, for dusting
- 1 sheet frozen puff pastry, thawed
- 1⁄4 cup oil-cured black olive, pitted and halved lengthwise
- 4 -6 anchovies, fillets. (optional)
directions
- Preheat oven to 425°F Melt butter with oil in a skillet over medium-high heat. Add onion and thyme, and cook until onions are golden and soft about 10 minutes.
- On a lightly floured surface, roll out pastry, and trim to 8 1/2 x 15 rectangle. Place on a parchment lined baking sheet, transfer to oven, and immediately reduce oven to 400°F Bake until pastry begins to rise, about 12 minutes.
- Arrange onions in a single layer over pastry, leaving a 2-inch border around edge. Top with olives and anchovies (if using) . Bake 15 minutes. Reduce heat to 375F and baked until puffed and golden brown, about 15 minutes more, (tent with foil if crust browns too quickly.) Cut into squares.

I made this Martha Stewart recipe because usually her things are very good, however I wasn't overly impressed. The puff pastry deflated once the onions were placed on top so it wasn't as flaky as I would have hoped, also it didn't look pretty. The flavours were good but I wouldn't make this one again.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
