Caramelized Brussels Sprouts With Cheese Crust

- 24 small Brussels sprouts (trimmed, outer leaves removed and cut in half)
- 1 garlic clove, minced
- 1 tablespoon olive oil, plus additional to coat sprouts
- sea salt
- fresh ground black pepper
- 1⁄4 cup asiago cheese, romano cheese or 1/4 cup parmesan cheese, grated
- seasoned breadcrumbs (optional)
directions
- Toss cleaned and cut sprouts in a light coating of olive oil.
- Heat the 1 tablespoon olive oil in a large skillet over medium heat. Do not overheat. Place the brussels sprouts in the pan flat side down in a single layer. Sprinkle with a couple pinches of salt. Cover and cook for roughly 5 minutes; the bottoms of the sprouts should only show a hint of browning.
- Uncover and increase the heat until the flat sides are deeply browned and caramelized. Add the minced garlic to the pan then turn the sprouts to the rounded side to brown slightly.
- Season with additional salt and the freshly ground black pepper. Sprinkle on top your cheese of choice. If desired, dust lightly with breadcrumbs.

Oh my! Most definitely great tasting sprouts! Be sure to use the small ones, 'cause they're tender & tasty! Didn't change a thing when making these & they came through wonderfully!
