Cabbage Casserole

"An interesting (kind of odd) combination of flavors and textures. I absolutely love this casserole. It is a great one-dish meal, and very stick-to-your ribs comfort food. I serve with a fresh, green salad."

  • Parboil cabbage and onions for 7 minutes and drain.
  • In small saucepan over medium heat, combine margarine, flour, milk, and seasonings.
  • Cook until margarine melts, stirring constantly.
  • Add Velveeta cheese, and continue cooking until cheese melts and sauce is smooth.
  • Remove from heat.
  • In 2 quart casserole dish, layer half of cabbage and onions, then bread, then sausage.
  • Repeat layers of cabbage and bread.
  • Top with sauce, and then top with remaining sausage.
  • Bake 30 minutes at 350 degrees.
  • Top with additional cheese and bake until cheese melts.

I am a single gal, living on my own; currently working as an Occupational Therapist & living in Cumberland, MD. (It is "God's Country" out here...beautiful!) I LOVE to cook and bake, and love anything that looks, tastes, smells, or even closely resembles a veggie. I LOVE moo-cows, and therefore, cannot bring myself to eat any part of the adorable critters (i.e. NO RED MEAT!!) I love the outdoors, and pride myself on being the master griller on the fire pit. My mother's side of the family is 100% Polish, so I have an inborn passion for cooking...unfortunately, along with that comes a love of eating, too!! But, hey..u only live once, so I say "EAT, DRINK, and BE MERRY!!!"
