Broiled Fish with Dill Butter

- 8 tablespoons softened butter
- 3 -5 drops lemon juice
- 1⁄8 teaspoon cayenne pepper
- 1 teaspoon finely chopped dill
- 1 1⁄2 lbs firm white fish fillets (haddock, halibut, cod, etc.)

directions
- Prepare at least several hours before broiling fish (can be made ahead and frozen).
- Make dill butter by combining first four ingredients and rolling up in plastic wrap or foil.
- When ready to cook, preheat broiler and spray broiler pan with vegetable oil, or coat with butter.
- Rinse fish and dry thoroughly.
- Season with salt and pepper.
- Place on broiler pan.
- Sprinkle fish with lemon juice.
- Place several generous pats of dill butter on fish.
- Broil on both sides several minutes until fish is opaque and flakes easily with a fork.
- Don't overcook.
- (Total time about 10 minutes per inch of thickness).

I made this with cod filets and the only thing I did differently was add abit of sauteed onion in the butter which I drizzled on in the last few minutes. The flavor is outstanding, I served this with PanNan's Tartar sauce recipe #47077 for my Dad who cannot eat fish without it. I thought it was perfection without it, but still tasted it with and it was also wonderful! With Lent coming this will be repeated frequently in our house, it can be made quickly for the weeknight dinners, throw in a baked potato and your set! Thanks PanNan...a wonderful recipe as always!

Lovely subtle flavor- I used dry Dill weed but will try this recipe again with fresh though I doubt it can get much better than last night's dinner.Fresh Lime juice instead of lemon I used Basa filet, started by baking it at 375 for 5 minutes, turned on broiler and 5 minutes later - moist tasty filet Thanks PanNan for a recipe that goes right into my Fish & Seafood cookbook
