Broccoli & Velveeta Cheese Soup

- cooking spray
- 1 cup chopped onion
- 2 garlic cloves, minced
- 3 cups fat-free low-sodium chicken broth
- 1 (16 ounce) package broccoli florets
- 2 1⁄2 cups 1% low-fat milk
- 1⁄3 cup all-purpose flour
- 1⁄4 teaspoon black pepper
- 8 ounces light processed cheese, cubed (such as velveeta light)
directions
- Heat a large nonstick saucepan coated with cooking spray over medium-high heat. Add onion and garlic; saute 3 minutes or until tender. Add broth and broccoli. Bring broccoli mixture to a boil over medium-high heat. Reduce heat to medium; cook 10 minutes.
- Combine milk and flour, stirring with a whisk until well blended. Add milk mixture to broccoli mixture. Cook 5 minutes or until slightly thick, stirring constantly. Stir in pepper. Remove from heat; add cheese, stirring until cheese melts.
- Place one-third of the soup in a blender or food processor, and process until smooth. Return pureed soup mixture to pan.

VNess, Im on a low cal diet, which as you know, sometimes means sacrificing taste. I was craving something cheesy, and I stumbled upon this recipe. I modified it for the diet and taste (I have an issue with using light cheese...lol). I used skim milk, fresh broccoli, and regular velveeta. This hit the spot!!! The taste was perfect! It came out a little thin, but that might be the skim milk. Nonetheless, fabulous!! (I'm thinking the leftovers will be a little thicker.) I got 9-1 cup servings out of this at 129 calories per serving!!! Diet comfort food at it's best! Thank you so much!!

Very good! A few minor variations: I used a 10oz box of frozen chopped broccoli, subbed vegetable broth for the chicken broth, and used a pint of fat free half-n-half and a half-pint of heavy cream in place of the milk and added a little cornstarch dissolved in a few tablespoons water to thicken it up more. Since I used chopped broccoli I did not have to blend it. It turned out FANTASTIC and even my picky DD2 ate a bowl. I will definitely be adding this to my cookbook for future use. Thanks for sharing!
