- 1 (14 1/2 ounce) can beets, sliced and drained (if using canned or cook 1 large beet)
- 1 1⁄2 lbs ground beef
- 1⁄2 cup fresh parsley plus 1 tbsp fresh parsley, chopped
- 2 garlic cloves, minced
- 2 tablespoons Worcestershire sauce
- salt & freshly ground black pepper
- 1 tablespoon extra virgin olive oil
- 3 ounces goat cheese or 3 ounces cream cheese
- 1⁄2 1/2 cup creme fraiche or 1/2 cup Greek yogurt
- 1 tablespoon fresh thyme, chopped or 1 teaspoon dried thyme
- 1 tablespoon fresh dill, chopped or 1 teaspoon dried dill
- 1 teaspoon lemon zest
- 4 crusty rolls, split
- red onion, slices
- red leaf lettuce
directions
- In a large bowl, combine the ground beef, 1/3 cup parsley, garlic, and Worcestershire sauce; form into 4 patties.
- Heat a skillet over medium high heat; season patties with salt and pepper and cook, in skillet, for 6 to 8 minutes, turning once.
- Meanwhile, crumble goat cheese into a bowl; stir in sour cream, thyme, dill, lemon zest, and 1 tablespoon parsley.
- Place cooked beef patty on bottom bun, top with beet slices, goat cheese mixture, red onion slice, lettuce, then roll top.
