Blueberry Cheesecake Pudding Cake

"Try changing up the cake mix and the variety of pie filling. I've tried chocolate cake mix and cherry pie filling and it turned out really good!"

  • Preheat oven to 350 degrees. With a spoon, mix cake mix, butter and egg together. Press dough into a lightly greased 9 x 13 pan. Bake 14 - 18 minutes or until light golden brown around edges. With a spoon, remove air pockets by pushing down evenly over entire hot crust. Allow crust to cool completely.
  • Beat cream cheese and powdered sugar together. Gradually beat in milk and pudding mix until smooth. Allow mixture to thicken in refrigerator 5 minutes. Gently fold whipped topping into mixture with a spatula. spread over cooled crust. Spoon pie filling evenly over top. Chill at least 2 hours before serving. Store in refrigerator.

  3. Nice simple dessert! I think my favorite part was the thick chewy crust! I used the fat-free sugarfree pudding mix and light cream cheese (that's what I typically keep in the house), and I used 2 packets of Dream Whip in place of the Cool Whip because I didn't feel like going shopping and waiting for the Cool Whip to defrost. I didn't find the crust to be too sweet (there's not much that's too sweet for me, lol), but I do think that the powdered sugar in the cheesecake layer could be cut down a bit. I personally would've liked to have tasted the cream cheese a little more in the filling, but that could've been due to the Dream Whip in place of the Cool Whip (I'm not positive how many cups of Cool Whip is in 8oz, so I might have added too much Dream Whip). I also would bet that this would be amazing with some homemade blueberry pie filling on top (usually more tangy than the canned pie filling, which I think would be a nice counterpoint to the sweet fluff part). I like that this can be made with reduced fat and sugar ingredients and still come out great, too. I think would be a nice addition to a summer party dessert table.   4. This was really easy to make and nice because I usually have the ingredients in the house. It was a little too sweet for my taste (crust) so I am thinking maybe next time cutting back on the powdered sugar or using sugar free pudding and cool whip. The kids loved it.
