- 1⁄2 cup butter
- 3 egg yolks
- 1 tablespoon lemon juice
- 1⁄2 teaspoon salt
- 1 pinch cayenne pepper
- 1 teaspoon crushed garlic
directions
- Melt butter until very hot, but not browned.
- In a blender at high speed blend egg yolks, lemon juice, salt, cayenne and garlic until yolks are frothy.
- Turn blender to low speed and slowly pour in hot butter in a steady stream.
- Blend around 15 seconds until the sauce is creamy.
