Blackberry Batter Pudding

- 1 lb fresh blackberries
- 4 whole eggs
- 2 egg yolks
- 1⁄4 cup all-purpose flour
- 1⁄2 cup caster sugar
- 1 pinch salt
- 2 cups milk
- 2 -3 tablespoons brandy
- powdered sugar
directions
- Preheat oven to 375°F.
- Arrange berries in the bottom of a greased 10" baking dish.
- Combine eggs, egg yolks, flour, sugar, salt and milk in a blender or food processor.
- Process until well mixed.
- Pour batter over berries.
- Place dish on a baking sheet.
- Bake for 30-40 minutes, or until puffed and golden.
- Remove from oven and cool; batter may sink a little.
- Just before serving, spoon brandy over top and dust with powdered sugar.

We made this with blackberries we picked on our walk back from the pharmacy. If you like custard this is great (my kids don't but I do). I messed this up by starting to make 1/2 the recipe then added the full amount of sugar... I increased what I could of the other ingredients but the custard was much more plentiful than the berries. I made some other major substitutions: egg beaters for eggs, bread flour for all-purpose, Splenda for caster sugar and 7-inch square casserole. I also didn't use the brandy because of having the kids taste it. Results: Baked 45-50 minutes - still runny (not runny after sitting about 2 hours), taste was OK but definitely missed the brandy. Nice dish for berries, thanks for posting! Reviewed for ZWT6.
