Black Bean, Edamame and Wheat Berry Salad

ingredients
- 4 cups water
- 1⁄2 cup dry wheat berries
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup frozen shelled edamame, thawed
- 1 cup chopped tomato
- 1⁄2 cup finely chopped red onion
- 1⁄2 cup diced red pepper
- 3 tablespoons extra virgin olive oil
- 2 tablespoons red wine vinegar
- salt and pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
directions
- Combine water and wheat berries in a med. saucepan, bring to a boil.
- Reduce heat and simmer 55 minutes, until wheat berries are tender.Drain in a strainer,run water over wheat berries to cool quickly. Combine wheat berries with the reamining ingreadients in a med. bowl. Toss to coat. Serve immediatly, or keep refridgerated 8 hours in advance.

<br>My family is very important to me. My Mom and I cook together all the time.Mom was a cook for 29 years at the College I worked at. My brother thinks he is Emril, and is always cooking new yummy things...his wife does not cook. My sister, well, she needs some improving, shes a quick and easy way as possible cook I rather spend the time and have a great dish.

<br>I love to cook for other people and show off my talents---I go all out and decorate the table with a theme, different levels and table coverings, maybe add some white lights, and flowers or pine branches for the holidays. I love a elegant table :)

<br>My pet peeve is: going out for a nice dinner, paying good $$ and being disappointed because I know I could have cooked it better, or ordering , say, a salad and it not being fresh--the really irks me. Alot of times I will special order something and make up my own menu--that way I know they have to make mine special, with special attention. My hubby hates when I do that.
