- 1 lb cheese, American, coarsely chopped
- 1 (4 ounce) jar pimientos, drained
- 2 tablespoons mayonnaise
directions
- Grind up the cheese and pimentos in a food processor until almost smooth, but with some small pieces of pimento visible. Scrape into a bowl and stir in the mayonnaise.

This is the Real Deal. Iconic pimento cheese. Ideally served cold approximately 3T between 2 pieces of hot crispy toast. Sliced diagonally. That's it. OK - a side of homemade tomato soup is OK with it. Any recipes that do not embrace the smooth deliciousness of American cheese & mayo do no justice to the the sweet delicate taste of pimento (it's there for more than color). Your ratios are great. We like our cheese in shreds so I very nearly freeze the block & then shred. We also will go for a twist of black pepper on the sandwich but nothing else. Thanks for posting the Real Deal.
