  • Stir together first 4 ingredients in a large bowl; make a well in center of mixture.
  • Stir together egg, milk, and oil until blended. Add to dry ingredients, stirring just until moistened. Spoon batter into lightly greased muffin pans, filling two-thirds full.
  • Bake at 400° for 18 to 20 minutes. Remove from pans immediately.

  1. I am slowly becoming a fan for your recipes! I love a good basic muffin, plain and simple, lightly sweetened (& as one reviewer discovered, great w/ no sugar added). Truly a rare find! This one's a keeper! Thanks a dozen!
     
  2. This is my second review for these muffins. I have continued to make this my only muffin recipe. My last review was in 2007, and since then I have found a few things that are fun to try: I use 1/2 and 1/2 instead of milk and then if the mixture was not wet enough, I simply added 1Tb of water or so until it got to the right consistency. I also subbed butter for the oil. For a topping, I had melted butter with cinnamon for some, and then others I topped with chocolate chips or carob chips. Rather than mix the various items (choc chips, etc...) in with the batter, i put them only on the top that way you can make a variety of muffins with one batch. If you need the choc chips or carob chips, or blueberries or whatever to be mixed in just use a toothpick to push them down into the muffin once it is spooned into the tin before baking. These are super delicious and the recipe could not be simpler.
     
  3. these muffins were a bit dense...could have used more milk and be careful not to over mix. I added cinnamon and pumpkin pie spice to the batter, and sprinkled demerara sugar and cinnamon on top, which gave a nice crunch.
     
  4. Very good muffin. I made these variations: I added 1/2 tsp. almond extract to liquid ingredients. Put 1/2 tsp. strawberry jam in center. Sprinkled the tops with sugar. Very tasty!!
     
  5. very good. nice short list of ingredients of things often found around the cupboard. didnt make a huge amt of them; just enough, and the texture was nice. not too fluffy; not too heavy. i did add 1/3c honey as my 3 yr old daughter made these with me and she wanted honey in them, and then sprinkled the tops with ground flax meal for her benefit. they were just sweet enough that you could have them for breakfast and not feel sickened by the sweetness. i dont like something overly sweet with my coffee so these are perfect. my daughter loved them as well. thanks for sharing.

  2. The basic recipe is wonderful. My Husband does not drink Milk. I substituted milk with unsweetened Almond milk, because the batter is too thick for my liking I used 1/2 cup Almond Milk. Normally when using Almond Milk you have to use less. I also added cinnamon to the dry ingredients and 1 tsp of vanilla to the wet ingredients. Instead of sugar I used Xylitol. I added low sugar jam to each muffin. Top of muffin with cinnamon and Xylitol mixture. The muffin is very moist and very Yummy.
