A basic, sweet pickle relish recipe for canning.

  • Combine all veg in a large bowl, sprinkle with salt, add water to cover and let stand for 5 hours.
  • Drain well and press out remaining liquid.
  • Combine remaining ingredients and bring to a boil.
  • Stir until sugar is dissolved.
  • Stir in veg and simmer for 10 minutes.
  • Pack into clean hot jars leaving 1/2 inch head space.
  • Process 10 minutes in a boiling water bath at altitudes up to 1000 feet.

    Sure would like to know how you get a yield of 6 pints. I followed the recipe precisely and got 3 pints.

    This is really good. I doubled the recipe and took the advice of another reviewer and reduced the syrup to half. Perfect amount of liquid in the relish. This is a keeper. Great recipe.

    5 STARS....! Thank you for sharing this classic recipe, which is so diverse,,,,Hot dogs, deviled eggs, a nice kick to potato salad, or a macaroni salad, and so easy.! and there is nothing better then sharing, or receiving home canned goods...! Thank you again!!
