"Scratch made Ranch Dressing from the Bar Nothing Ranch"

ingredients

• 1 1⁄2 cups low fat cottage cheese
• 1⁄2 cup sour cream
• 1⁄2 cup yogurt
• 1⁄2 buttermilk
• 2 garlic cloves, roasted and minced fine
• 1 teaspoon oregano
• 1 teaspoon thyme
• 2 teaspoons parsley, fresh
• 2 tablespoons lemon juice, fresh squeezed
• 1 tablespoon red wine vinegar
• 1⁄2 teaspoon white pepper, fine ground
• 2 ounces pancetta, diced fine, fried, drained and cooled

directions

1. Using a blender or food processor fitted with steel blade, combine cottage cheese, yogurt, sour cream, buttermilk, lemon juice, vinegar, garlic, oregano, thyme, parsley, and pepper to taste.
2. Blend until creamy and smooth.
3. In sealable container stir in pancetta.
4. Refrigerate 2 hours before using.
