  • Preheat oven to 300 degrees Farenheit.
  • In large bowl, beat egg whites until slightly stiff. Gradually add sugar and cream of tartar and continue to beat. Add vanilla and salt and continue beating until whites stand in stiff peaks. Spray 9 x 9- inch glass baking dish with non-stick cooking spray. Spread meringue over entire bottom and sides of dish to form a crust. Bake in 300 degrees Fahrenheit oven for 45 minutes. Remove and cool.
  • After crust has cooled, prepare pudding mix according to package directions and fold in sliced bananas. Pour pudding mixture into crust and sprinkle ground graham crackers on top. Chill and serve.

  1. This was a nice yummy dessert, that was enjoyed in our family! The banana custard filling was awesome! It was sweet, thick and pure bananalicious! :) Loved it and will make this again often filling all sorts of things. lol<br/>I made my own graham crackers using Recipe #430121, which worked out very nicely.<br/>I, too, wish I had baked the meringue in a circle on the baking sheet as it somehow never crisped up completely. It stayed a bit soggy in the middle despite being brown and crusty on the outside.   3. Beth - This was just wonderful. I wanted to make just a small amount so I made a small batch in little individual shells in Pyrex custard cups. Also used fat-free pudding and low-fat grahams. Wish I had a little bit of chocolate sauce to drizzle on top as that would have sent this over the edge.
     
  4. This is so good! My dh was supposed to take the meringue out of the oven for me, but forgot! So when I got home he had made another meringue---any recipe easy enough for my husband to make deserves 5 stars! I buy my pudding in bulk, and it called for 1 c. pudding mix to 3 c. milk, so that's what I used. A yummy dessert that won't last long at our house; thanks!
     
  5. This was a very nice, light tasting desert. I think I should have followed Fairy Nuff's advice and cooked this as per a pavlova as it didn't have quite the texture I'm used to. I used kiwi fruit instead of bananas; everyone like this very much, thanks for posting!
