ingredients
- 3 large ripe bananas
- 1⁄2 cup butter
- 1⁄2 cup brown sugar
- 2 eggs
- 1⁄4 cup milk
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1⁄2 cup mini chocolate chip
directions
- Preheat oven to 375°F.
- Place 18 paper baking cups in a pan.
- Mash the bananas.
- In a large bowl, combine butter with the brown sugar; add eggs one at a time.
- Add the milk, vanilla, and mashed bananas; mix well.
- Add flour to banana mixture, also baking powder, baking soda, and salt.
- Mix until just moistened.
- Stir in mini morsels.
- Fill paper cups 1/2 full.
- Bake 22 minutes.

Muffins were rather small and didn't rise much. I would make 12 muffins rather than 18 next time. They weren't quite sweet enough--maybe a tad more sugar as well. I took my daughter to work while they were baking--getting back 10 seconds before the 22 minute timer went off--and they were a little too browned. If I were home, I would have checked sooner--they were probably done after 18-20 minutes.
