Baked Shredded Carrots

"This is one of our favorite carrots side dishes. I have also made these on the grill."

  • In a large bowl, combine the carrots, onions, sugar, salt and celery salt.
  • Transfer to an ungreased 1-1/2-qt. baking dish and dot with butter.
  • Cover and bake at 325° for 45-50 minutes or until carrots are crisp-tender.

  1. Easy and good! Not sweet and syrupy like other carrot recipes. A nice addition to dinner. Thanks for sharing the recipe!
     
  2. I made this for 2 servings and on reading the other reviews, decided to dice the carrots. We did happily add the sugar as many-a-wonderful carrot recipes are glazed with honey or some type of sweetener. Fresh carrots are yummy raw, steamed, and even sweetened. That said, this recipe is a nice side dish. We feel the green onion was a bit overpowering, and next time perhaps would use just 1 shallot clove for a full 6 servings. Overall, a nice recipe.
     
  3. I wasn't feeling well so tasked DH with making these. He doesn't cook much and strayed from the recipe but was still good. He put the carrots in the food processor so they were a bit small and used regular onion instead of green onion. I loved that the carrots didn't get mushy and was a good and different veggie to have with dinner. I will try these again shredded and with green onion.
     
  4. 123 Hit Wonders 2008 ~ I liked this but I don't think DH was too keen on the carrots being shredded. I halved the recipe but think that the recipe could do without the sugar as carrots are already sweet enough. Would like to try this again but thinly slice the carrots and leave out the sugar.
     
  5. I love carrots to begin with, but these were rather good - something very diffrent then just canned carrots. I cut the recipe in half to use up the carrots i had left and cooked it in a small round dish, it took about 35-40 minutes until they were how we like them. I could do without the onions, but i just hate onions lol, i might just ad some onions powder next time. thanks for the recipe bmcnichol

I have two boys Eddie 18 and Brandon 10. I have been with my hubby for 16 years. I work full time outside the home and my boys keep me busy at home. Eddie is a singer and base guitar player in a band and Brandon races go karts. We also have a Collie/Beagle mix named Sugar. I love to cook and try out new recipes. My family likes it too but at times ask my to make just "normal" food, as I forget sometimes to make my own TNT recipes. I cook a lot with with my crock pot as it makes life a lot easier for me. I am always on the look out for new crock pot recipes. I'm not much of a baker as I don't like to measure things. I collect cookbooks and recipes in general. I usually start with a recipe and tweak to my families liking. My Rating System: 5 Stars = The whole family enjoyed the dish and it will be added to my TNT cookbook. Book #220911. These recipes will be made again and again. 4 Stars = Recipe was good, but needed some modifications or it was good but not something we would want on a regular basis. Also goes into my TNT-4 star recipe cookbook. Book #220912 3 Stars = It was edible, but won't be made again. 2 Stars = Needs some kind of major adjustments. 1 Stars = Inedible, didn't work, waste of ingredients.
