Baked Guilt-Free Cheesecake

"This is a delicious healthy alternative to cheesecake I found and adapted from a Herbal Magic cookbook - it doesn't quite taste like the 'real thing' but it is still quite delicious! I use Splenda where it calls for artificial sweetener"

  • Mix the graham crackers and artificial sweetener, then add margarine and mix with a fork until completely moistened.
  • Press mixture into the bottom and up 1/3rd of the side of a 9-inch springfoam pan.
  • Refrigerate for 1 hour.
  • Preheat oven to 350°F.
  • Blend eggs, egg whites, artificial sweetener, and vanilla extract.
  • Gradually add cottage cheese until very smooth.
  • Pour on top of graham cracker crust and top with cinnamon and nutmeg.
  • Bake for 45 minutes or until firm.
  • Turn off oven but leave cheesecake in for one hour with the door open.
  • Chill overnight.
  • Top with crushed strawberries before serving.
