Baked Garlic Chicken and Potatoes

- 2 boneless skinless chicken breasts, washed
- 4 medium red potatoes, Cut up
- 2 tablespoons butter, melted
- 2 tablespoons olive oil
- 2 tablespoons parmesan cheese, shredded
- 1⁄4 cup white wine
- 1⁄4 cup lemon juice
- fresh ground pepper
- garlic salt
directions
- Put Olive oil in glass baking dish.
- Pour wine and lemon juice over chicken breasts in glass dish.
- Sprinkle garlic salt and pepper on chicken.
- Bake in covered dish for 30 Minutes at 400 degrees.
- Take out of oven and turn chicken breasts over and add potatoes around them in dish.
- Drizzle butter over potatoes.
- Sprinkle garlic salt and pepper over potatoes and chicken.
- Cover and return to oven.
- Bake 30 minutes more.
- Remove dish from oven and uncover and sprinkle with parmesan.
- Bake for 5 minutes or until parmesan is melted.
- Times may vary depending on oven and if chicken is frozen, may take longer.

Enjoyed how easy and flavorful this was. As we are on a low sodium die used garlic powder instead of garlic salt. The chicken was tender and the potatoes were so tasty after cooking in the lemon juice and wine. The parmesan cheese made a nice bonus on top. This will be made again. Thanks for the post.
