  • 6 large king oyster mushrooms
  • 6 pieces bacon, cut in half
  • sea salt

  • Preheat oven to 375°F.
  • Slice mushroom stem width-wise into 1-inch thick medallions. From 6 mushrooms you should get about 12 medallions. You can reserve the cap to use in another recipe.
  • Wrap half a slice of bacon around each round and secure with a toothpick.
  • Bake on foil-lined baking sheet for 35 to 45 minutes, or until bacon starts to crisp. Turn once halfway through.
  • Sprinkle with sea salt just before serving.

  1. These are excellent and simple. You do not need oil because of the bacon grease. Mine came out excellent and beautiful. I bought two King Oyster Mushrooms from the Farmers Market for $10. Thin sliced bacon at Aldis is less than $4, so maybe half a package. One pointer. If you use colored toothpics like I do, avoid the dark blue or green. They bleed through. But it is not a tragic thing, still taste excellent and beautiful party appetizer, side dish, salad topping, or as a lovely Hors d'oeuvre.
