Avocado, Blue Cheese and Bacon Filling/Sauce

"Before I was veggie/vegan I loved this. Now I just make it veggie with veggie bacon. My husband loves this too. Put it in sandwiches with pasta or on potatoes. It's a bit addictive and not for those on a diet. Adding a bit of rocket to this tastes nice and it means you have included a vegetable with your fat for the day (that makes it healthy)!"

  • Cut your avocado in half; remove stone and slice.
  • Squeeze lemon juice over avocado.
  • Dry fry bacon in frying pan until crisp, snip into slices approx 1 cm wide.
  • Cut up and crumble the danish blue.
  • Mix all of the above together and season with salt and pepper.
  • Mix with hot or cold pasta,, roughly tumble onto a sandwich or put in a potato.
