Auntie Zilla's Almond Meal Pancakes

- 6 eggs
- 1 cup ricotta cheese
- 2 cups almond meal or 2 cups hazelnut meal
- 1⁄2 cup cream
- 1⁄2 cup water
- 2 teaspoons almond extract or 2 teaspoons vanilla extract
directions
- Mix all ingredients. I personally never add sweetener, but Aunt Zilla adds a tablespoon of sweetener.
- Heat butter in a skillet and cook like regular pancakes. These do tend to crumble a bit more so be sure they are cooked all the way to the edge before flipping them.
- I personally like rather small pancakes and this makes about three dozen. I eat 3 or so in a breakfast serving. I really like them under asian food instead of rice, usually using 2. "Aunt Zilla" gets a dozen out of the recipe.

I have always loved your cooking and it makes me sad that I can't just go next door to get some! But with these I can get a taste of what i remember! Absolutely delicious with the stir-fry! The only issue is that I can never get them to stay together when I flip them... but then again... I mush them up under my food anyways!

I like anything by Mollie Katzen, too. <br /> <br />I am trying to get better at making soups. I am also making forays into Russian cooking. <br /> <br />I am on a low carbohydrate diet for various and sundry health reasons. It's a lot of fun tweaking recipes to be low carb enough for me to enjoy. I've become a much better cook because of it. <br /> <br />I love sewing, embroidery, cooking, baking, and dancing. I just got a full time job again so I am relearning how to fit my cooking in around a strict schedule. The crock pot is once again my best friend.</p>
