Aunt Rosella's Banana Salad

"This is dated 1983 in my mom's cookbook and attributed to my lovely Aunt Rosella--where she got the recipe, we don't know. I remember eating this as a kid and loving it. Wonderful use of bananas"

  • Chop peanuts.
  • Mix egg, sugar, water, and vinegar. Put in heavy saucepan.
  • heat until low boil, stirring constantly until thickened.
  • Cool.
  • Cut each banana in half and peel. Now slice each in half again.
  • Place on platter sliced sides up.
  • Cover bananas with sauce and sprinkly with chopped peanuts.

  2. yummy, easy, fast and healthy! sort of lol. I loved it. Also because of the sugar and to give it a little balance i used both plantains and bananas.

  4. Delightful, and worked well with chipotle-flavored peanuts (couldn't resist that tweak after I found them in our company vending machine). I also grew up with chopped peanuts garnishing bananas. Made 1/4 recipe (1 tablespoon lightly beaten egg) for this morning's breakfast. This would make a nice dessert (although people might need a mint if made with chipotle-flavored peanuts). This brought back wonderfully warm memories of my childhood, thank you for sharing this recipe, westtextazzy. Made for the Bodacious Brickhouse Babes for ZWT5.
