- Chop peanuts.
- Mix egg, sugar, water, and vinegar. Put in heavy saucepan.
- heat until low boil, stirring constantly until thickened.
- Cool.
- Cut each banana in half and peel. Now slice each in half again.
- Place on platter sliced sides up.
- Cover bananas with sauce and sprinkly with chopped peanuts.

Delightful, and worked well with chipotle-flavored peanuts (couldn't resist that tweak after I found them in our company vending machine). I also grew up with chopped peanuts garnishing bananas. Made 1/4 recipe (1 tablespoon lightly beaten egg) for this morning's breakfast. This would make a nice dessert (although people might need a mint if made with chipotle-flavored peanuts).
