Au Gratin Peas and Potatoes

- 6 bacon, strips divided
- 1 onion, chopped
- 4 cups sliced peeled cooked potatoes
- salt and pepper
- 1 (10 ounce) package frozen peas, cooked and drained
- 2 cups shredded cheddar cheese
- 1⁄2 cup mayonnaise
- 1⁄2 cup milk
directions
- In a large skillet, fry bacon until crisp.
- Remove bacon to drain on a paper towel lined plate.
- Drain skillet, reserving 1 tablespoon bacon drippings.
- Saute onion in the bacon drippings, until tender.
- Layer with potatoes, salt and pepper to taste, peas, 1 cup of cheese, and crumbled bacon.
- Reduce heat; cover and simmer for 10 minutes or until heated through.
- Mix together the mayonnaise and milk until smooth texture.
- Pour mixture over bacon.
- Sprinkle with remaining cheese.
- Remove from the heat and let stand for 5 minutes before serving.

YUMMY! Made this for my Wed. nite dinner with the crew of 9..along side the STICKY PINEAPPLE RIBS! I doubled everything and used Red Potatoes unpealed ( I hate to peal) and the color was great! I used 1 cup mayo and 1/4 cup sour cream to I cup 1% milk. I layered everything in a 9X13 and poured milk miture over the top and put it in the oven 350 for 1/2 hour...(the last 1/2 hour of the rib baking process.) This allowed time for me to sit and enjoy everyone..with a nice glass of wine and it was all ready together. THESE are really yummy and went over very well with everyone! Gave the recipe out and will save it for a yummy potatoes casserole...soon!
