Atkin Induction Friendly Crustless Quiche

"This is a great recipe anytime but is perfect for induction on the Atkins Diet. I like the "crust" that forms on the outside so I do use muffin tins instead of a pie shell."

  • Heat oven to 350 and butter your deep pie pan or your muffin tins.
  • Cook bacon until crisp, drain and coarsely chop.
  • Use one tbsp of drippings to saute onions for 5 minutes until soft but not brown.
  • Combine eggs, cream, spinach, cheese, salt and pepper.
  • Stir in bacon and onion.
  • Pour mixture into prepared pan.
  • Bake 1 hour 15 minutes (takes about 1 hour in muffin tins).

  1. This is a lovely basic recipe. I only used 1 package of frozen chopped spinach because that was what I had on hand and also had to top us the gruyere with a bit of cheddar but otherwise followed the recipe to a 'T'. It took 1 hour in my toaster oven. Thanks for a nice induction recipe!

Someone who can look in the cupboard and put together a delicious meal from seamingly nothing, someone who can take an average recipe and make something extraordinary, someone who has a great knowledge of herbs and seasonings (an excellent cook knows that nutmeg goes great with spinach!) and finally, someone who turns out meals that taste as if they took all day but are really very simple.
