Filling
- 1 lb ground turkey
- 1 tablespoon light soy sauce
- 1 teaspoon minced garlic
- 2 teaspoons minced fresh gingerroot
- 1 tablespoon applesauce

Garnishes
- 1 cup brown rice
- 2 cups water
- 1 cup shredded carrot
- 1 cup green onion, thinly sliced
- 1 cup sliced red bell pepper
- 1 cup sliced radish

Sauce
- 1⁄3 cup light soy sauce
- 1⁄3 cup water
- 3 tablespoons fresh lemon juice
- 3 teaspoons very finely minced garlic, about 6 cloves (use a garlic press or a mortar and pestle for best results)
- 1 tablespoon minced fresh gingerroot
- 1 teaspoon sugar
- 1⁄2 teaspoon chili paste (sriracha) (optional)
directions
- Mix filling ingredients together in a bowl. Cover and refrigerate 30 minutes for flavors to penetrate.
- Combine rice and water in a pot. Bring to a boil, reduce to a simmer, cover tightly and cook until tender, 30-40 minutes. (You may substitute white rice, which will only take about 20 minutes. You may also use a rice cooker, if you own one.).
- Heat a non-stick skillet over medium heat. Add meat mixture and saute until no longer pink.
- Combine sauce ingredients in a bowl, then divide into 4 serving bowls.
- Serve family style, with meat, rice and vegetables in bowls on the table, along with a platter of either large lettuce leaves or rice paper wrappers. Place a few spoonfuls of meat, a spoonful of rice, and a few of the vegetables on a leaf, roll up, dip in sauce and eat. (Alternately, mix meat, rice and dipping sauce together, then fill leaves with mixture and vegetables.).

After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
