DIRECTIONS

  • In a serving bowl, combine oil, vinegar, salt and pepper. Beat with a fork to blend. Add arugula to bowl and toss to coat.
  • With a vegetable peeler, shave off very thin slices of Parmesan and scatter over the top of the salad.
