Artichoke Pasta

ingredients
- 4 ounces marinated artichokes
- 1 garlic clove, peeled and crushed
- 1 tablespoon fresh parsley, finely chopped
- 1 tablespoon thyme, finely chopped (leaves only)
- 1 lb linguine, cooked
- 1⁄2 lemon, juice of
- parmesan cheese, shavings
directions
- Pour the artichokes, with their oil into a pan and mash them down with a fork.
- Add the garlic, parsley and thyme and heat through for a couple of minutes and then pour over the warm pasta.
- Add the lemon juice and toss thoroughly.
- Serve in bowls topped with shavings of parmesan cheese.

<p>I will start by saying that I love to cook and also love collecting recipes so I am very happy to have joined Recipezaar and really enjoy going through all the recipes that have been generously posted by other members. <br /> <br />I only cook for myself during the week but on weekends I usually have 2 meals to prepare for family and friends. I am on WW and try to keep my choices in line with WW but will indulge myself and save a few recipes that don't fit in with WW for special occasions. My favourite food is curry and am always on the look out for a new curry <br />recipe. <br /> <br />I love to garden as my Zaar name would indicate, I grow tomotoes and herbs but space is limited so mostly I have perennial and annual flowers and plants. <br /> <br />My baby is a lovely little ShihTzu X Poodle named Rosie, she is my only child so of course is spoiled rotten.
