Applesauce Pudding

- 5 apples, peeled and cored
- 1⁄4 cup brown sugar
- 1 dash salt
- 1 vanilla bean
- 1 cinnamon stick
- water
directions
- * Cut your apples into wedges and transfer to a medium sauce pot.
- * Barely cover the apples with water and add the vanilla bean and cinnamon stick.
- * Cover the pot and bring to a boil. Then remove the cover and allow everything to simmer till apples appear to be falling apart.
- * Do not drain. Remove apples from heat and carefully take out the vanilla bean and cinnamon stick. Add the brown sugar and salt.
- * With a potato masher or fork mash up the apples until they obtain the desired consistency. Serve hot or cold.

SUBSTITUTIONS:
- Replace vanilla bean for 1 teaspoon of vanilla extract.
- Replace cinnamon stick for 1/2 teaspoon of ground cinnamon.
