Applesauce Pudding

"This is a recipe I came up with when trying to get my son to eat more fiber. He hated the store bought brands of applesauce and who could blame him. We like this served hot with a little butter and is a great addition to oatmeal, cream of wheat or spooned over vanilla ice cream. *Use whatever variety of apple that is your favorite.*"

  • * Cut your apples into wedges and transfer to a medium sauce pot.
  • * Barely cover the apples with water and add the vanilla bean and cinnamon stick.
  • * Cover the pot and bring to a boil. Then remove the cover and allow everything to simmer till apples appear to be falling apart.
  • * Do not drain. Remove apples from heat and carefully take out the vanilla bean and cinnamon stick. Add the brown sugar and salt.
  • * With a potato masher or fork mash up the apples until they obtain the desired consistency. Serve hot or cold.
  • SUBSTITUTIONS:

  • Replace vanilla bean for 1 teaspoon of vanilla extract.
  • Replace cinnamon stick for 1/2 teaspoon of ground cinnamon.
