Applesauce Muffins

directions
- Cream butter and sugar, add eggs and vanilla, mix well.
- Stir in applesauce.
- Mix flour, baking soda and spices.
- Stir into creamed mixture.
- Fold in nuts.
- Fill greased or paper lined muffin cups 3/4 full.
- Bake at 350* for 25 minutes, or until muffins test done.

I've been making these for awhile now and really enjoy them. They're quick and easy and use common ingredients. I've discovered I can substitute half the butter with an extra 1/2 cup more applesauce without sacrificing flavor. But, unlike so many baked goods that taste best fresh from the oven, I find I enjoy these much more if they're allowed to sit for several hours or even over night since time seems to blend the flavors more.

Awesome recipe dude! My sister takes classes at our church, and every week one of the parents takes snack for the entire 50 students. Since my mom is the hall moniter, we wern't supposed to have brought snack, but at the last minute the organizer for the classes called and said that we needed to. I made up some of these muffins and brought them. The classes loved them so much, the kids were swapping there fruit snacks for muffins! One teacher even had her kids come out to the hall and personally thank me! This recipe is definatly a keeper!

This was a great starting point - all the proportions are perfect. I used pureed pear instead of the applesauce and chopped rhubarb instead of the nuts (I needed to use them up!) They were moist and spicy, and they made the house smell great. Best served warm, or at least same day before the tops get sticky.

thanks for this recipe!! =) i usually sift through many many recipes before deciding which to make based on the ingredients that i want to use. i made this into a loaf of apple-cranberry bread and many muffins. it was sooo wonderful that a person who tried it asked me to bake it to sell!! instead of regular sugar, i used light brown sugar...and margarine instead of butter. i put 1 tsp of cinnamon...no cloves/allspice. i peeled 2 fuji apples and diced them in. Mmm... =)

Very nice! I found I needed to add quite a bit of milk to the batter as it was very stiff (this might not have been the recipe, could have been that I used slightly smaller eggs or whatever). I had no allspice and used mixed spice instead. Just realised the recipe calls for nuts and I think they'd be great but I had none - muffins still superb!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
