Apple Raisin Muffins

"This is another recipe I got from my girl Paula Deen. My son LOVES these muffins and they freeze great so I can always have them available to pull out for a mid afternoon snack for him. I am completely anti-raisin, but he loves them so that's all that matters. Next time I will make half a batch for me and leave out the raisins, b/c they smell heavenly."

  • Preheat the oven to 350 degrees F.
  • Combine the water, sugar, apples, raisins, butter, cinnamon, nutmeg, and cloves in a saucepan; bring to a boil. Remove the pan from the heat and cool completely.
  • In a large bowl, stir the nuts and baking soda into the flour. Add the cooled mixture to the bowl, and stir until blended. Fill greased miniature muffin tins with batter to the top. Bake for 15 minutes.

  1. These muffins were delicious. I only used 1/2 cup of walnuts but followed the recipe otherwise. My elderly parents thought they were better than bakery muffins. Made for PAC Spring '09.
  2. WOWIE! i really loved these muffins. I made to recipe, except i didn't have nutmeg so i just left it out. My hubby thought they would be weird, but even he loved them! i will probably omit the walnuts next time, as i thought they kind of ruined it for me..still liked 'em tho!


I am a stay at home mom of two wonderful little boys, Alex and Andrew. Cooking and Baking are my two favorite hobbies, and it's a good thing because I do it a lot!! My husband can be somewhat picky so when I find a recipe that he likes, it immediately goes into my "keeper" file. I'm a big believer in cooking healthy meals that are both good for you AND delicious. Don't get me wrong, I do love a good dessert, as you can see by my chocolate marshmallow brownie recipe!!! But everyone deserves to splurge every now and then. It's just all about moderation. I also enjoy staying fit by doing aerobics and yoga.
