- 2 cups self-rising flour
- 1⁄2 cup sugar
- 1⁄4 cup brown sugar
- 1 teaspoon cinnamon
- 1⁄4 teaspoon nutmeg
- 1 cup dried apple, chopped
- 1 egg
- 3⁄4 cup milk
- 1⁄4 cup vegetable oil
directions
- Preheat the oven to 400 degrees. Grease 12 muffin tins.
- Combine dry ingredients in a large bowl and add the egg, milk and oil.
- Stir the ingredients until they are just blended. Do not over-mix.
- Spoon the batter into greased muffin pans, filling 3/4 full.
- Bake for 15-18 minutes or until golden brown.

We really enjoyed these. I followed the recipe other then I used Splenda instead of sugar, canola oil instead of vegetable oil and a bit more apples then indicated. I also forgot to add the nutmeg. I put these in for 15 minutes but I checked them at 13 and they were burnt a bit on top. Next time I would watch them more closely. They were really tasty. We all enjoyed them.Reply
