Very Healthy Apple Muffins

ingredients
- 1 large granny smith apple, chopped
- 1⁄2 cup Splenda granular, sugar substitute
- 1⁄4 cup unsweetened applesauce
- 1 egg white
- 1⁄2 teaspoon vanilla
- 3⁄4 cup wheat flour
- 1 teaspoon cinnamon
- 1⁄2 teaspoon baking soda
- 1 dash salt
directions
- Chop apple and pour Splenda over, let sit 10 minutes.
- Add applesauce, egg white and vanilla.
- Combine dry ingredients and add to apple mixture.
- Spoon into muffin pan sprayed with cooking spray.
- Bake 20-25 minutes in a preheated oven set at 350°F.

For healthy, a great choice; for taste, not quite great, & I did follow the recipe right on down! I'll do them again, another time, & then I'll take tips from several others who've made them ~ I think adding some toasted wheat germ would add to the flavor, as would some dried fruit (as in those dark raisins that I enjoy so much)! Very good muffin for fat free sugar free. I added raisins to mine. They dont have the same texture as regular muffins but that is what you can expect from using applesauce in place of the oil. I think these would also taste good with pumpkin or mashed bananas instead of the applesauce. Either way these were very tasty and I will make again. Thanks for posting!

I just finished baking these muffins for the Zaar Healthy Recipes ABC game. Here are some notes that I made: 1.) I used a red delicious apple as that's all that I had 2.) I added 1/4 cup toasted wheat germ, 3.) I used my muffin scoop and I only got 5 muffins from this batter, 4.) I baked them in my Pampered Chef Stoneware Muffin Pan, 5.) My bake time was exactly 22 minutes and 6.) I put all the ingredients into my Weight Watchers Recipe Builder and it came out to 2 points per muffin. They are pretty tasty and were very easy to prepare. Very nice size batch for when you just want a few muffins and not a whole dozen. Thank you for posting.
