Apple Meringues

"This is from a health on-line article, and with fall just around the corner, the apple season begins! The best apples to use for this, in my opinion are either Jonagolds or Golden Delicious. You may find a better one suited to your taste. The end result is what's important: Yummy!"

  • In a small saucepan, poach apples in apple juice (or half water) 8 to 10 minutes or until barely tender; drain. Spoon 2 tablespoons marmalade into center of each half.
  • Heat oven to 350°F In a medium bowl, with an electric mixer, beat egg whites until soft peaks form when beaters are lifted. Gradually beat in sugar, beat until stiff peaks form. Fold in almonds.
  • Cover tops of apple halves to edges with egg-white mixture; place on baking sheet.
  • Bake 7 to 10 minutes or until tops are lightly browned.

I have seen some very famous entertainers, including Liza Minnelli, Penn and Teller, Ray Liotta, Dr. J (Julius Erving), Frank Sinatra and his wife Barbara Marx. and many, many more. Cooking is my passion, and I am slowly, but surely beginning to venture into the world of baking. To me, cooking is so much easier because baking is so much more exact. I love to make Italian and Mexican food the best, followed by Chinese and last, but by far the least, good old American food! How can you beat chicken fried steak, mashed potatoes and gravy?? I love to find several recipes and put my own spin on them and create a new recipe.
