  • Preheat oven to 425.
  • In a large bowl sift together flour, baking powder, baking soda, salt and cream of tartar. mix in brown sugar.
  • Grate chilled butter and incorporate in 2 or 3 batches.
  • Peal and core apple, and chop into small chunks. Add apples and lemon zest to flour and stir.
  • Add cream, combine. Be careful not to over stir or knead.
  • Turn contents of bowl onto floured board. By hand, pat together into a 6"x 6"square with uniform thickness. Cut into quarters and then cut each quarter diagonally.
  • Cover jelly roll pan with parchment paper. Space scones evenly on tray, brush with cream and sprinkle with sugar and cinnamon.
  • Bake for 15 - 20 minutes or until lightly brown on top.
