Adequate Beer Cheese Soup

"I love this soup!  Great with bread to dunk in!  Some good advice from my Mom:  if your food just tastes "meh" - add a little salt.  Amazing what a little salt can do!"

  • Melt butter in a large stew pot.  Add onions, carrots and celery.  Cook 5 minutes stirring occassionally.  Add garlic  and italian seasoning and cook for a minute.  Add the flour and stir for at least a minute (will be like a paste).
  • Add your water, milk and beer and bring to a boil.  Add maggi chicken bouillon cubes.  Stir.  Cover and lower heat to medium low and simmer for 10 minutes.  Add your cheeses and stir until they melt.  Season with salt and pepper to taste.
  • Eat with good bread and enjoy!
