Adequate Beer Cheese Soup

ingredients
- 3 tablespoons butter
- 2 cups mirepoix (chopped onions, carrots and celery)
- 1 tablespoon chopped garlic
- 1⁄3 cup flour
- 2 maggi chicken bouillon cubes
- 1 tablespoon italian seasoning
- 2 cups water
- 2 cups milk
- 12 ounces beer
- 2 cups cheddar cheese, shredded
- 1⁄2 teaspoon pepper
- 1⁄2 teaspoon salt (optional)
- 1⁄4 teaspoon cayenne pepper (optional)
- 4 ounces American cheese
directions
- Melt butter in a large stew pot. Add onions, carrots and celery. Cook 5 minutes stirring occassionally. Add garlic and italian seasoning and cook for a minute. Add the flour and stir for at least a minute (will be like a paste).
- Add your water, milk and beer and bring to a boil. Add maggi chicken bouillon cubes. Stir. Cover and lower heat to medium low and simmer for 10 minutes. Add your cheeses and stir until they melt. Season with salt and pepper to taste.
- Eat with good bread and enjoy!
