Abc Bread

"If they served this in grade school, you wouldn't have had any trouble learning your ABC's. This delicious bread has A=apples and apricot preserves, B=bananas, and C=cinnamin. Add walnuts, and you have a delicious, nutricious snack. For a fancy dessert, whip some cream with a hint of cinnamin and lemon zest, and add a dollop."

  • Preheat oven to 350°F Spray 2 loaf pans with cooking spray.
  • Shake 1 T flour into the bottom and sides of each pan. Shake out excess.
  • Mix eggs, lemon zest, both sugars, oil, apricot jam, baking soda and salt.
  • Mix together grated apples and mashed bananas.
  • Add walnuts and four. Mix to incorporate.
  • Mix the struessal topping ingredients together. Place 1/2 topping in the bottom of each of the prepared bread pans.
  • Add 1/2 of the bread mixture to each pan.
  • Bake at 350 F for 55-60 minutes.
  • Remove from oven and let cool ten minutes.
  • Use a knife to loosen bread. Invert on a serving plate and slice.
  • Mix together whipped topping. Add a dollop to each slice if desired.

  1. I really liked this loaf, the taste was very good and the baking time was perfect, but I was a bit disappointed with the struesal. I think it would have been better in the middle of the loafs, as it was it just went hard on the bottom. But the loafs were very good, it was just the struesal I had a problem with I might make it again and put the struesal on top or in the middle, maybe I read the recipe wrong. Made for RSC#15 Update, I just had to tell you that I gave one off the loafs away to my friend who was visiting the day I made this and she said to me how did you get that crunchy bit on the bottom. She loved it and said it was the best bit of the cake. So there you go not everyone has the same tastes, she rated it 5 star
     
  2. I opted for baking soda vs. baking powder in this because both were listed. The struesel part didn't work at all for me and I wondered if I should have used cold butter (it didn't say). I wish the amounts of apples and bananas would have been in cups because my bananas were rather large and overpowered the taste of everything else. After grating the apples I had a lot of juice and wasn't sure if I should add it or not so I poured it off. We didn't taste the apple at all. The loaves tested done at the 55 minutes but they were very dense. The struesel stuck in the pan and it was kinda burnt so I couldn't use it. This recipe has potential if the chef might correct the errors. Good luck in the contest.
     
  3. Let me start by saying the overall taste of this bread is good. A few problems. First in your ingredient list you state to use baking powder. In your instructions it says to use soda. I used powder hoping this is what you meant. I cut the recipe in 1/2 and used 3 mini-loaf pans. I should have used two as the bread didn't rise and so now I"m thinking you meant soda. Hmmm...still not sure. Also, with the streusel...I did add another good t of flour as I felt it was too gooey. It didn't make much difference and so I forged ahead and spooned the streusel on the bottom of the bread pans. In making breads b/f using struesel, I think the streusel should have been put on top as mine stuck to the bottom of the pans and made the bottom of my bread icky. Good flavor overall!!! Made for RSC#15.
