Parmesan Acorn Squash With Toasted Pine Nuts

Ingredients

    1. 1 acorn squash, cooked ( I grill mine whole in tin foil after removing seeds)
    2. 1/4 cup shredded parmesan cheese
    3. 2 tablespoons butter
    4. 1/4 cup toasted pine nuts
    5. salt
    6. pepper

Directions

  1. Scoop squash out of shell.
  2. Add cheese, butter and pine nuts and blend.
  3. Salt and pepper to taste.
