ingredients

• 2 cups grated zucchini
• 2 eggs, slightly beaten
• 1⁄4 grated parmesan cheese
• 1⁄3 cup flour
• 1 teaspoon sugar
• 1 tablespoon milk
• 1⁄2 teaspoon baking powder
• salt and pepper
• butter, for frying

directions

1. Mix all ingredients a large bowl. Heat up a skillet over medium-high heat, melt butter in skillet. Drop zucchini mixture into skillet by the spoonful, flattening slightly. Cook until crisp, flip, and repeat on the other side.
