Zucchini Coffee Bars

"A "blondie" type bar with the added "zing" of coffee. No need to peel the zukes. And you can just dice them instead of shredding if you prefer."

  • Preheat oven to 350°F.
  • Grease and flour a 8x8-inch baking pan.
  • Dissolve instant coffee in hot water.
  • Mix coffee with remaining ingredients together in a large bowl, until just moistened.
  • Spread into prepared pan.
  • Bake 25 minutes.
  • Cool in pan and cut into 9 bars.

  1. A very different kind of bar. Very moist with a dominate coffee flavor. Love that there is no add oil in these bars. Made as written. At the end of the 25 minutes bake time it did not pass the toothpick test, end up needing an additional 10 minutes before it did pass the toothpick test. A nice moist bar that was just alright. If you are looking for a healthy treat and have excess zucchini these may just fit the bill.
