This is a zippy and quick salad dressing taken from a low carb cooking book.
- 1⁄4 cup fresh lemon juice
- 1 tablespoon grated lemon zest
- 2 tablespoons chopped fresh dill weed
- 1⁄4 teaspoon salt
- 3⁄4 cup olive oil
- 1⁄2 teaspoon dill seed
- Beat all ingredients together until well blended.
- Chill and serve.

I really enjoyed this dressing. Had no dill seed so didn't use it. As some other reviewers suggested, I added 1 tablespoon Key Lime Honey to the mixture for a little sweetness and to cut the acid a bit. It was a lovely light dressing served over mixed baby greens. A nice bright dressing! We enjoyed it over a simple combination of mixed greens and cucumbers. The fresh dill and lemon worked well together. We might add a pinch of sweetener to cut the acid in the lemon (our preference). Thanks bigbadbrenda. Made for ZWT5.
Zippy Lemon Dressing made for one of my Easter salads - a delightful dressing! Served over those lovely mixed salad greens - delicous. Didn't have the dill seed but the market had lovely fresh which I generously snipped into the dressing ... other than adding a touch of sugar ( just a family preference) I made as posted. Thank you Brenda for a new recipe to add to my homemade dressing collection.
