Add a little spice to an ordinary cake mix and come up with this refreshing dessert. And it's low in fat! From Prevention's Eat Up, Slim Down.

  1. Preheat oven to 325 degrees or according to cake mix directions.
  2. Coat a 13"x9" baking dish with nonstick spray.
  3. Prepare cake mix according to package directions using egg substitute or eggs and water. Pour into the prepared baking dish. Bake according to package directions.
  4. Remove from the oven and cool in the pan on a rack.
  5. Poke holes all over cake with the handle of a small wooden spoon.
  6. Pour pineapple (with juice) over cake.
  7. In a large bowl, with an electric mixer, beat cream cheese until smooth.
  8. Add milk, pudding mix, cinnamon, and nutmeg. Beat 3 minutes.
  9. Pour over pineapple.
  10. Top with whipped topping.
  11. Decorate with oranges if using.
  12. Cover and refrigerate at least 4 hours.

Wish I could give this 10 stars!!! What a delightfully delicious cake...and low fat as an extra bonus. I made this exactly as written and wouldn't change a thing. I also added the mandarin oranges on top which made for a beautiful presentation. This is a winner. Thanks for sharing, TheGrumpyChef.

This was a pretty tasty cake. I had to make a few alterations based on what I had or didn't rather. I used lemon pudding instead of vanilla so didn't use any of the spices. I also accidently added the cool whip to the pudding mixture instead of on top ... what came out of all was a good cake. I plan on making sure I have all the ingredients next time and will post an updated review.
