Yellow Squash , Eggplant and Feta Casserole

  • Slice lenghtwise the squash and eggplant into 8 slices each.
  • In a large storage bag place oil, lemon, garlic, herbs, pepper, squash and eggplant. Marinate for 1 hour in refrigerator.
  • Grill over hot coals for 5 minutes turning half way through.
  • Layer grilled squash, eggplant and cheese in a glass 8x8 dish top with sauce and microwave for 3 minutes.
  • Enjoy!

  1. I made some changes based on what I had in the house... fresh grated parmasean instead of feta and season salt instead of the herbs. This dish was great and I will be making it again this weekemd with the feta. My version was basically grilled eggplant and squash parm but the whole family loved it.
     
  2. I need to clarify. I used only the Nuker because I don't have a grill. The wife is afraid I would blow up the town. So everytime I go to buy one, I get stopped. What happened with that is: the recipe adapts very nicely. Five stars after I made some flavor changes. Four stars without. This is without the grilling which of course changes the flavor of the dish but again highly adaptable. I added: Mrs Dash Tomato and Garlic seasoning. Basil. A small hit of Mrs. Dash Italian seasoning to the marination. I also used a mild/blandish store meat flavored tomato sauce. Next time I am going to throw in a bit of liquid smoke and see what happens.
     
  3. After reading the reviews, I added some fresh basil and oregano to mix mix and increased the garlic (LOTS) for more flavour. We didn't do this over hot coals as we didn't have weather anywhere near suitable for a BBQ (yes, it IS summer here) and I found that if you do them in a fry pan you'll have to increase the cooking time considerably. (we have it at least 20 minutes before anything looked less than rock hard) Also, cutting slices very very thin helps a lot and yes it was tasty, .. having said that I would like to work further in this recipe so that we can use this as a starting point and build in more herbs. One point.. I must have a very small microwave.. I couldn't layer things out as required and still get the dish into the microwave so transfered to the oven to finish it off. All in all an excellent recipe to build upon .. please see my rating system, a lovely 3 stars. Thanks !
     
  4. Just to add to my first review, I added a tablespoon of balsamic vinegar to the marinade and my family loved it. I think balsamic vinegar is wonderful in most marinades.
     
  5. I liked it with the feta. I also agree it is a little but on the bland side. I'm not great with tweaking recipes, so if someone can figure out a few herbs to add this could be a amazing recipe. Still very good quick recipe.
