  1. Melt oil and butter in a large skillet over medium heat.
  2. Mix in potatoes,shiitakes, pepper, squash, and shallot.
  3. Season with garlic powder, salt, and pepper.
  4. Cook 25 minutes, stirring occasionally, until potatoes are tender.
