Wicked Good Pizza Dough

"This recipe makes for some delicious pizza dough that's ready to go fairly quickly. To make it right, you pretty much REQUIRE a kitchenaid or some other large stand mixer with a dough hook."

  • Put honey in large mixing bowl with 1/2 cup warm water, stir to dissolve honey.
  • Add yeast packet and stir until yeast is well separated.
  • Allow yeast to activate.
  • In a small bowl, mix salt and spices. (Dried rosemary may use to be broken up a bit as well).
  • When yeast has activated, add 1 cup of Bread Flour, 1 Tbsp of Olive Oil, and the salt and spice mixture. Mix with a dough hook for a minute or two.
  • While continuing to mix, add remaining 1/2 cup of water and slowly begin adding flour, 1/4 cup at a time.
  • (If you are using the parmesan, add it while mixing in the remaining flour).
  • When the dough on the hook leaves the bowl clean, holds up as a ball, and doesn't stick to your hands too badly anymore when touched, you have added enough flour.
  • Remove the dough from the mixing bowl and roll into a ball with your hands; place this ball in a clean bowl with a splash of olive oil. Toss the dough ball until it is coated, then cover and allow to rise for about one hour.
  • When the dough has doubled in size, you may stretch it, dress it, and cook it in the oven at 500 degrees for 10-12 minutes.
