This is a recipe I got off the Weight Watchers site. I have not tried it yet but it sounds really good and easy.
- 1 cup chopped mushroom
- 2 tablespoons light sour cream
- 1⁄4 cup water
- 2 (3/4 ounce) wedges Laughing Cow cheese
- Sauté mushrooms till soft, add remaining ingredients and heat through until cheese is melted.
- Makes two servings at 1 point!

I tagged this with no idea as to what I was going to serve with it. While I was preparing it thoughts kept popping in to my mind. But my end result was to serve it as a stand along side dish. DH and I both enjoyed the mild cheesy flavor. Although this would be great served with angel hair pasta with a scattering of Parmesan cheese on top, we felt that it complemented what we had for dinner this evening. Thanks chris_tam for posting.
This is so good. It tastes amazing and I cook it at least once a week. I use on serving over chicken and the other over vegetables. YUMMY!
