V's Pea Salad for a Crowd

"Posting this by request after serving a few of my Zaar friends ;) This feeds a crowd. Half the recipe for family size."

  • In a colander, rinse frozen peas under hot water for 3-4 minutes (keeping the peas crunchy).
  • In a large bowl combine peas, diced onion, cubed cheddar cheese, roughly chopped hard boiled eggs and mayonaise. Stir with wooden spoon gently to combine and chill for at least an hour. Just before serving sprinkle with salt and pepper to taste.
  • Serve as a side dish or for a refreshing salad for lunch or dinner!
  • Enjoy with family and friends.

  1. Made this as instructions except for cutting it in half. I have never added hard-boiled eggs to my pea salad and it was delicious! Definately a keeper. Thank you for submitting the recipe. Made for Zaar Cookbook tag game.
     
  2. OMG, we loved this salad! We were lucky enough to have V prepare this for us at a 4th of July get together, and it was a hit with the whole crowd. Very fresh and creamy, we totally loved it. In fact, it's my new favourite. I couldn't stop eating it LOL! Thanks V, for a yummy salad and a new recipe :)
     
  3. This is the first time I had pea salad and it was very good. My guests enjoyed this salad very much as well. But the main point is that this salad is magical it really is a crowd recipe!!! I decided to double it because I just couldn't understand how the quantities could feed that many people and now I'll be eating pea salad for the next 4 days!! I just put 4 onions total instead of 2 because we like our salads oniony.

I don't think there's anything better than spending time with family and friends and enjoying delicious food together. I just love food. I love reading about food, writing about food, cooking food and.. not surprisingly, eating food. My latest passion is food-photography! I know it takes time to photograph and upload photos - So I want to say thank you from the bottom of my heart for finding and trying my recipes and taking the extra effort...
