Vggiegirl's Low-Carb Cream of Cauliflower-Dill Soup

Craving a potato soup, I opted for (low-carb) cauliflower instead. I made this last night on a whim and it was GREAT! Makes 3 servings For Vegan option use only Vegetable Broth.

Ingredients Nutrition

  • 1 head cauliflower, chopped into chunks
  • chicken broth (I used 2tsp of Country Life powder, I would think that just regular veg broth would work as well)
  • dill (fresh is best, if using dried 1-1 1/2tsp)
  • rice milk or soymilk, added at the end
  • pepper

Directions

  1. Wash and chop the cauliflower.
  2. Put into a pot, and JUST cover with water.
  3. Add broth powder, cube, etc.
  4. Simmer until tender.
  5. Transfer to blender in batches (I think it took me 4 batches to puree all of it) Return to pot.
  6. add milk until you reach your desired consistency.
  7. Also add Dill at this time.
  8. Simmer this for a bit longer and enjoy!
