ingredients
- 1 beet, peeled and coarsely chopped
- 2 carrots, peeled and coarsely chopped
- 118.29 ml fresh green beans, ends snipped and cut in half
- 4-6 garlic cloves, whole, peeled
- 1 medium-large sweet potato, coarsely chopped
- 59.14 ml Brussels sprout
- 1 medium onion, diced
- 22.18-29.58 ml fresh parsley (to taste)
- 2-3 sprig fresh baby dill (to taste)
- 59.14 ml parmesan cheese, roughly (to taste)
- 14.79-22.18 14.79-22.18 ml regular olive oil or 14.79-22.18 ml melted butter
directions
- Preheat over to 450.
- Mix everything together, except dill and cheese.
- Coat veggies with EVOO, just enough to help the parsley stick, don't drown them.
- Cover with foil and roast for 35-45 minutes, mixing halfway through.
- Coat with cheese and dill while the mix is still hot.

I am happily engaged to the love of my life and we have a beautiful baby boy together. My fiancee eats my food every single night :) I am a lone vegetarian but he is sort of one, not by his own choice :) Every time I make something a little scary sounding like "really good veggie meatloaf" he reluctantly tries a bite and every time he likes it :) I can't wait for my son to get some of those teeth I have been hearing so much about and can start eating too.
