Cold chickpea based mediterranean salad. Healthy and vegan.
- 1 medium tomatoes, cubed
- 14 ounces artichoke hearts, quartered
- 30 ounces canned chick-peas
- 1⁄2 red onion, minced
- 2 garlic cloves, minced
- 1⁄4 cup olive oil
- 1⁄4 cup balsamic vinegar
- salt (to taste)
- pepper (to taste)
- Rinse the canned chickpeas. Mix all ingredients in a large bowl. Serve Cold.
Excellent, easy, healthy salad. Was a great hit at our recent Xmas festivities. I added in diced capsicum and baby spinach leaves for some extra colour and healthy goodness. Thanks for the recipe!
